Intro: The 2000 Château Pavie reveals an inky, opaque plum-purple core and opens with an impressive bouquet of blackberry, cassis, black cherry compote, truffle, licorice, cedar and graphite. On the palate it is full-bodied and concentrated yet refined, showing superb fruit density, seamless tannins, vibrant freshness and a long, mineral-rich finish. Château Pavie is the largest estate classified as Premier Grand Cru Classé A in Saint-Émilion, with more than 35 hectares of vines on the limestone plateau of the appellation. The 2000 vintage was produced under owner Gérard Perse (who acquired the estate in 1998) and is widely regarded as one of the benchmark Right Bank Bordeaux wines of modern times.

Region: Bordeaux || Winery: Château Pavie

Grapes: 60% Merlot, 30% Cabernet Franc, 10% Cabernet Sauvignon

Aging: Matured in a very high proportion of new French oak barrels (around 70% – 100% new) for ca. 18-32 months depending on parcel

ABV: 14% || Decant: 1–2 hours || Serving Temp: 16-18°C

Pairing: Pairs beautifully with richer red meat dishes: venison, beef tournedos, lamb saddle, veal chops with truffle, or finely aged cheeses. The wine’s power and minerality call for robust yet refined cuisine

Tasting Notes: The 2000 Pavie Saint-Émilion presents a deep garnet-purple hue, nearly opaque. The nose unfolds layers of blackberry, black cherry preserves, cassis, truffle, licorice, toasted oak, and graphite. Full-bodied yet elegant, it delivers seamless dark fruit, silky tannins, and bright freshness over a rich, structured backbone. The finish is long and refined, with lingering notes of dark chocolate, spice, and mineral-chalky tension

Rating (Complexity & Vintage Year): 96 AA
