Intro: The 2015 Les Saint Georges from Domaine Robert Chevillon is a serious and age worthy Pinot Noir from one of Nuits Saint Georges’ finest climats. The vineyard “Les Saint Georges” is considered by many to be the top cru of Nuits Saint Georges, and Domaine Chevillon holds a parcel of about 0.63 ha in that climat. The vinification and ageing philosophy at Chevillon is very traditional: low yields, 100% destemming, cold maceration, and long élevage. Such that the wines are built for long term cellaring.
